Thnot is present on a large scale in Cambodia with more than 3 million trees.< p>In general, the first harvest of sap and fruit is done after 15 years. This harvest does not alter the development of the tree in any way.
The flower of the sugar palm is used to obtain the sap.
By evaporation, this sap gives sugar. By fermentation, it gives vinegar and wine.
The sugar palm is known as the fetish tree of the Khmer people. Established in the kingdom since very ancient times, thnot is literally one with Cambodia.
So much so that for the Khmers, this tree with 1000 virtues is the indisputable mark of identification of the territory of the country as illustrated by this popular maxim: where s he raises the thnot is Khmer land.
The thnot play a very important role in preventing soil erosion during the monsoon. Khmer farmers spend six months of the year cultivating rice and the other six months harvesting palm sap for a steady income throughout the year.
During the dry season, from January to May, when rice cannot be planted, many villagers depend on palm trees for a living.
In addition to delimiting the national territory and bringing a regular income to many villagers, the thnot is considered the national symbol of Cambodia because many riches have always been drawn from it.

The sap harvest period, according to the specifications of the Geographical Indication, extends from December 1 to April 30 (KSPA, 2009).
The climber exerts pressure and then notches the inflorescence of the palm.
The sap is collected in bamboo containers which are unhooked twice a day: at the end of the day and at night. Each inflorescence produces between 45 and 60 days (Pillot, 2008). Therefore, one tree can produce 100 kg of pulp (KSPA, 2009).
To produce palm sugar it is essential that the sap has not had time to ferment. This is why the peasants place pieces of Popèl wood in it to prevent fermentation.
The sugar concentration varies according to the harvest months and the sex of the tree. The amount of sap depends on these two parameters, but also on the tree itself, the soil and the tapper. (Borin, 1996)
